While we know almost nothing about Phoebe, there is a family story that one of the Hubach's way back married a Fair Jewess, by that it is taken that she was a Jewess with fair hair.

It is assumed that the fair haired Jew was Pheobe because she had died before her daughter-in-law and grandchildren knew her and her son would have passed on what he knew of his parents.

With Phoebe being Jewish and her husband coming from a Christian family, this could provide insight into why their son was not baptised until after his parents had died.
