Thurston is a town in Steuben County, New York, United States. The population was 1,350 at the 2010 United States census. The town is named after early landowner William Thurston.

The Town of Thurston is the east-central part of the county, northwest of Corning.

The town was formed from the Town of Cameron in the year 1844.
