The 1880 census has her name as Ellen O., daughter-in-law, and age is 23. That gives an estimated birth year of 1857. But Wes Cochran's Cemetery Book lists her birth year taken from tombstone as 1852. This would make her 7 years older than her husband. So I think the 1857 birth year is more likely correct.

Others have her name as Ella Ora and her son Roy Lee Stout's 3rd marriage info has her name as Ellenor O.
