There was an alternative marriage at Tiverton of a widower named John May and a Mary between 1851 and 1861: John May and Mary Gunn on 14th April 1853. This 1856 marriage to Mary Clapp has been identified as the correct one on the basis of Mary's birthplace; in the 1861 census she gave her birthplace as Witheridge, corresponding to the birthplace of the unmarried Mary Clapp of similar age who appears in the 1851 census in Tiverton. (It is frustrating that the father's name part of the marriage certificates is not filled out for either the 1853 or 1856 marriages.)
