Samuel Sibley was a butcher and cordwainer. His will, dated 9 May 1749 and proved 17 July 1749, made his brother-in-law, John Ropes, his executor. There was a saying in Salem regarding Samuel Sibley- Sibley's meat, "Like Sibley's beef, never so fat never so lean, see for yourself," which he was accustomed to use in commendation of his provisions. There was also another saying at the time, "Like Sibley's beef, all fat but the bones and they are full of marrow."
