The maiden name comes from the fact that Sadie Piechocka is also in the family plot and is listed as an aunt in at least one of Adam and Jozefa's (Josephine's) son's death notice but her obituary doesn't list any Przybyleks. Therefore, we assume that Sadie is Jozefa's sister.
