Sarah Pollington's origins have yet to be confirmed. She consistently claimed to have been born around the early 1790s in Buxted in Sussex. Certainly there were people called Pollington living in Buxted around that time, but no obvious baptism for Sarah has been found. In 1812, Sarah married a Tunbridge Ware manufacturer named James Medhurst at Tonbridge in Kent. They had their first daughter, Sarah, baptised at Frant in Sussex in 1813, before moving to Brighton where they had another two children in 1815 and 1819. Between 1819 and 1821 they moved to Sompting, also in Sussex, where they had another five children between 1821 and 1832.

James discovered Roman remains at Lancing, near Sompting, in the late 1820s and ran tours of the site for a time. After the landowner reclaimed the land James moved his museum into the family home at Sompting, before moving to Worthing.

In the 1841 census Sarah appears living at West Buildings (also known at the time as John Street) in Worthing with five sons aged from twenty down to eight years old. Her husband James appears to have left the family by this time; he was living with a woman named Phoebe Hammond over in Weymouth and they had a baby daughter.

Sarah appears in the 1851 census living at 11 West Buildings, when she was described as a Tunbridge Ware turner. In 1861 she was living alone at 11 West Buildings.

By 1871 Sarah was living with her daughter Ann's family at 18 Chapel Street in Worthing. Sarah died there the month after the 1871 census, with her cause of death being given as paralysis. She was said to be 78 years old.
