Esther L Diggs, born Oct 1861 in Illinois, both parents born in Kentucky
Elisabeth Griffith, born Dec 1886 in China, father born in California, mother born in Illinois

This appears to be the same person. Elisabeth Griffith is likely her daughter from a previous marriage, and given that she was born in China, Esther and her first husband may have been missionaries. Her second husband, Benjamin Evans Diggs, was a Reverend according to his gravestone. The strong church connection and her time in China could explain her use of the name Esther (with the L being the initial of her maiden name, as was common practice).
