The wide variety of combinations of names suggests that there are two separate persons involved here. Possibly one was his first wife, and the other the second. Possibly she was previously married, and one of the surnames in use is her name by her previous marriage. It is also possible that there were two distinct Isaac Coen's with different wives, and that the four combinations of husband and wives have been combined in differeing combinations of the wife's name(s).

One researcher notes that when she applied for a pension related to Isaac's War of 1812 record, she gave her name as Susannah Keith. This may indicatge that she remarried after Isaac's death and her husband's name was Keith. The researchers interpretation of this is somewhat different from this, and believes that "Keith" was her maiden name. In anycase, Ancestry has a card for Isaac Coens 1812 service pension application, and it clearly identifies Susannah as his widow, and shows her using the "Coen" surname. There may be a later pension document that has her name as "Keith".
